21st July, 2007 - it's mat rock's birthday and it's RNet Annual Gathering. We decided to celebrate the day with RNet members who came to the gathering. During the food listing, I accidently told them about pulut kuning, then it was in the list. Thought of just eating pulut kuning with rendang, I changed the way of serving by layered them with spicy mince meet. Decorated a bit, so, it looked like a whole cake. Yup!! Iman called it Kek Kuning . The rossettes made of whipped potato and the guitar shape was carrot sliced.


PULUT KUNING BERLAPIS DAGING

Pulut Kuning
Inti Daging (Meat Filling)
Cake board

For Garnishing
Whipped Potato
Carrot
Cucumber
Mint leaves

Use any shape cake pan. Line with plastic sheet.
Spread 1/3 of pulut kuning to cover the pan base. Press to compact the pulut.
Layer 1/2 filling on it. Spread next 1/3 of pulut kuning on top of the filling and press to compact.
Layer another 1/2 filling and spread another 1/3 of pulut on and press to compact.
Put a cake board on top and turn upside down.
Decorate as desire.

2kg glutinous rice
3 tsp turmeric powder
1 cup santan (coconut milk) extract dilute in
3 cups water
2 tsp salt

Clean and soak overnight glutinous rice in the water mix with turmeric powder. Wash and drain.
Boil water in steamer pot and steam the rice for at least 20 minutes.
In a basin dilute santan extract with water and add in salt.
Fold in steamed rice in santan mixture until well covered.
Steam one more time for 20 minutes or till well cooked.



Meat Filling

1kg mince meat
1 pack meat curry powder
1 inch ginger
3 cloves garlic
6 shallots
2 scoops blended chillies
3 pcs asam keping (dried tamarind skin)
1 cinnamon stick, cardamon n star anise
1 cup water
Salt n sugar to taste
4 tbsp cooking oil

Heat cooking oil in a pan. Pound ginger, garlic and shallots till fine.
Throw in cinnamon, cardamom and star anise for fragrance. Stir-fry pounded ingredients with blended chillies till fragrant. Add in curry powder, stir well.
Put in mince meat and mix well. Add-in water and asam keping. Bring to cook. Add in salt n sugar.
Low the heat and simmer for sometimes till the filling dried, stir frequently in between.
Ready to use.



Whipped Potatoes (for the rosettes)

300g potatoes
1 tsp salt
Pepper
Milk as desired – I used uht milk

Boil potatoes till cook. Cooled and skinned.
In a mixing bowl, shred cool cooked potatoes. Add in salt and pepper.
Whipped shredded potatoes with electric mixer. Gradually add in milk a spoon at a time till consistency achieved.
Ready to use.


The ones in the cups were given to people who behind the curtain betul ker???
