Peria Goreng Telur

Bittergourd or peria is my lifetime favourite. Most people doesn't like it because of its bitter taste. But to me, the bitter the better . It is better to eat raw as salad (ulam) and good practise for people suffer from Hypertension like me .



Peria Goreng Telur



2 small bittergourds - seeded n sliced
2 biji peria katak - buang biji & dihiris
1/2 big onion - sliced
1/2 biji bawang besar - dihiris
1 chilli - sliced
1 biji cili merah - dihiris
pinch of achovies
secubit ikan bilis
2 eggs - lightly beaten
2 biji telur - dipukul sedikit
salt to taste
garam secukup rasa
2 tbsb cooking oil
2 sudu besar minyak masak

Wash sliced bittergourd in water with a pinch of salt and drain.
Heat oil in a pan. Stir fry onion and anchovies till fragrant. Throw in washed bitterguard n sliced chilli, fry for 5 second. Add in salt.
With low heat, add in beaten eggs. Stir the eggs with all ingredients with high heat till the eggs evenly cooked.

Cuci peria dengan air yang dicampur sedikit garam dan toskan.
Panaskan minyak dalam kuali. Tumiskan bawang dan ikan bilis sehingga naik bau. Masukkan peria dan cili, kacau goreng selama 5 saat. Tambah garam secukup rasa.
Kecilkan api dan masukkan telur dan ratakan. Kacau goreng ngan api besar untuk seketika atau sehingga telur masak rata.
