Kursus Pembuatan Roti (Veriaty Buns & Donut)

 
Hah... Ini la Chef Farid yg hensem tu...
only 3 student including me

divided into 3 portions (3 person maaa...)

I attended this class on 3rd March, 2007 with two others office colleagues. Fee RM150/person. Here, I attached the recipes learnt from Chef Farid. Not bad... tried many times already but have to aware the water quantity used. Happy trying and good luck!


Sweet Bun

500g High Protein Flour
100g sugar
10g yeast
25g milk powder
5g improver
10g salt
1 egg
100g margerine
250 ml water

Prepare all ingredients.
Put all dry ingredients in the mixer bowl except water
Use speed 1, slowly add in water.
Knead till the dough elastic.
Take the dough out and do first 'resting' process for 5 minutes.
Divide dough into 60g each.
Proceed to 2nd 'resting' process.
Shape and decorate the dough into required bun and put on tray.
Proof the bun till it double in size.
Take out and do the last 'garnishing' process onto the dough.
Bake at 180 degree Celcius for 15 minutes. Add more time for the dough to be cooked if necessary.
Apply glazing as soon as buns out from the oven.


Toppings for Mexican Bun
100g butter
100g sugar
100g cake flour
Enough coffee/emulco/nescafe

Mix all ingreadients together. Spread ontop of the bun.


Doughnut

75g sugar
8g salt
40g milk powder
10g yeast
3g baking powder
5g bread improver
1 egg
50g Margarine
250ml water

Prepare all ingredients.
Put all dry ingredients in the mixer bowl except water
Use speed 1, slowly add in water.
Knead till the dough elastic.
Take the dough out and do first 'resting' process for 5 minutes.
Divide dough into 60g each.
Proceed to 2nd 'resting' process.
Shape and decorate the dough into required bun and put on tray.
Proof the bun till it double in size.
Deep fry till golden.
