Our Lunch on CNY Holiday

Bayam Goreng
Sambal Tumis Udang
Siakap Lemak Manis
Yesterday, Chinese New Year holidays started. We planned to go back to Mentakab the day before CNY to see my Hubby's only Sister but we had to cancell. I forgot that I had already promised to meet Kak Deyana from Kuching at Hasmawati's residence. They just came back from Kota Bahru, the shopping paradise . Then we met at dawn hour... We got back home at 2 am.

The whole morning, I used my time to tidy up my tiny kitchen and we had late lunch because of that. For lunch, I only cooked 3 dishes for my family. We normally had our lunch with very simple dish. Light and easy to prepare... Its finished in a minute... that's starrrrrvingggg....

Siakap Lemak Manis

Ikan Siakap - fried
2 shallots - chopped
2 clove garlic - chopped
6 pcs cili padi
ginger - thinly sliced
1 cup Coconut milk
2 pcs dried tamarind
1 tbsp sugar
salt to taste
2 tbsp cooking oil
1 onion for garnishing

Heat oil in a pan. Drop shallots, garlic, ginger and cili padi in the hot oil. Stir fry a bit. Add in coconut milk, dried tamarind, sugar and salt and bring to boil. Slow down the heat. Don't stop stirring after add in the coconut milk. Put in the fish when it's started boiling. Add in the garnishing onion. Stir about 5 minutes and ready to serve.

Sambal Tumis Udang

300g prawns - shelled and washed
2 big scoops of Blended chillies
4 tbsp blended onion
2 cloves garlic - pounded
1 cup tamarind juice
2 tbsp sugar (optional or can be reduced)
salt to taste
cooking oil
1 big onion - sliced for garnishing

Heat cooking oil in a pan. Put garlic and blended ingredients in. Stir fry for 8minutes. Add in salt, sugar and tamarind juice. Stir to mix well. Put in the prawns when the water in sauce reduced. Stir well for 5 minutes. Add in garnishing and mix well. Off the heat and ready to serve.

Bayam Goreng - this is the easiest... I looiiiiikkeeeeeeeeee!!!

Spinach - plucked, washed and drained
1 shallot - sliced
1 clove garlic - sliced
1 red chili - sliced
salt to taste
cooking oil
1/2 cup water

Heat cooking oil and drop the anchovies and sliced ingredients in. Stir fry till its turn brownish. Add in water and bring to boil. Add in the spinach and salt to taste. Let it simmer for 3 minutes and off the heat. Ready to serve.
