Sup Tauhu Rebus

 
Ni untuk kengkawan yang sedang ber'diet' dan nak lari dari makanan berminyak. Semua main rebus gitu... memang favourite kita ni jenis rebus-rebus, orang jawa ni agaknya memang pesen jenis masak rebus... "beningan"... . Masak pun tak rumit... betul-betul jimat masa.

Lawannya - Nasi putih panas2 + ikan goreng atau ikan masin ker + sambal belacan... sure meleleh peluh tu masa makan... jangan tercungap2 dah ler...


Sup Tahu Rebus

Bahan (sukatan ikut suka)
2 keping tahu soya - di dadu
hirisan lobak merah
daun sup (saderi) - potong 1"
bawang kecil/merah - hiris
ikan bilis/udang (basah atau kering)
2 cawan air
garam secukupnya


Masukkan air, tahu soya, bawang, dan ikan bilis/udang ke dalam periuk. Didihkan di atas api sederhana.
Bila dah mendidih, masukkan hirisan lobak merah. Perasakan garamnya. Renihkan beberapa minit.
Taburkan daun sup sebelum diangkat.
Hidangkan.

itu le masalahnye..niatnye nak berdiet..tp kalo dah ade ikan masin..sambal belacan..
ee rasenye..'jaga badan' jangan bagi kurus le jawapnye..

This project was due almost a month ago, if I'm not mistaken... hehehe... ordered by Lynn Hassan - ish... tokey ni order kat kita, dup dap dup dap jer dada... requested by her son KIMI - mau kek pulut... Lynn and her mother was not well at that time to prepare the 'kek pulut' and the 'tai-chi' came to me... ah... rezeki... hehehe...

Black Fungus

Stir-Fried
Hot with prawns
Black Fungus - some people call it Cendawan Hitam or in my kampung known as 'Telinga Kera'. The chewiness in nature produce crunch sound - krup krap krup krap - in your mouth chewing them, make the taste even more yummy and fantastic . Let's see what I got... very very simple recipe for a rushing career lady or 'Malas' like me

Simple Stir-fried

Black fungus - sliced
garlic - crushed
onion - sliced
cili padi - sliced
oyster sauce
vinegar
cooking oil

Heat oil in a pan.
Saute garlic, onion and cili padi till soft. Add in oyster sauce and vinegar.
Stir in fungus and cover the pan with lid for 3 minutes. Add some water if too dry.
Serve.




Hot Black Fungus with Prawns

Black Fungus - sliced
200g prawns - head discarded
1 tbsp oyster sauce
2 tbsps blended chilli
cooking oil
1 tsp vinegar or lime juice

slice
1 onion
1" ginger
2 clove garlic

garnishing
red chilli - sliced
spring onion

Method
Heat cooking oil in a pan.
Saute the onion, garlic and ginger till fragrant.
Add in blended chilli and oyster sauce, stir fry till the chilli lil'bit dry and add in fungus and prawns. Mix all ingredients well together.
Add vinegar and cover the pan with lid for 3 minutes. Add water to fast cook the prawns.
Garnish with sliced red chilli and spring onion. Serve.

p/s: I will normally omit the salt, if oyster sauce is used in my cook.

Black Fungus (Cloud Ears)
(fresh and dried)

Black Fungus: (Auricularia polytricha) see illustration. Also known as cloud ear; tree ear; wood fungus, mouse ear, and jelly mushroom. It grows rapidly on a variety of woods including mango and kapok and is very similar to another fungus called Jew's ear (A. auricula). Some say the smaller cloud ear or mouse ear has a more delicate flavour than the larger wood ear.

It is mostly sold dried but is also available fresh. In its fresh form (or after the dried fungus has been reconstituted by soaking in water) it is easy to see how it derives its rather fanciful names. The frilly, brownish clumps of translucent tissue with a little imagination resemble the delicate curls of the human ear or billowing clouds. In the case of tiny mouse ear fungus, the rounded shapes which result when it is soaked are amusingly similar to those observed on the heads of Mickey Mouse and his Mouseketeers!

Wood fungus is prized in Chinese cuisine for its crunchy texture and therefore added to dishes only for the last few minutes of cooking. Delightful in salads, soups and stir-fries, it has no flavour of its own, but absorbs the seasonings it is cooked with.

Purchasing and storing: In its dried form there is a choice between the small variety which looks like flakes of greyish-black paper; or the larger variety which, even in its dried state, measures about 5-8cm (2-3 in) across and is black on one side, grey or beige on the other. After soaking, these need to be sliced into strips. All dried fungi keep well if stored airtight.

Preparation: Fungus must be soaked in warm water prior to use (15 minutes for small, 30 minutes for large). It swells to many times its size. After soaking, the fungus is rinsed thoroughly and trimmed of the tough, gritty part where it was attached to the wood. Then, particularly if using the large variety, it is cut into pieces of a suitable size and shape before adding to a dish.

Medicinal uses: Black fungus has a reputation in Chinese herbal medicine for increasing the fluidity of the blood and improving circulation. It is given to patients who suffer from atherosclerosis. Western medicine is now investigating centuries-old claims made by Eastern sages and finding them surprisingly accurate.

Fake Dory Fish Fillets
They are still at it!

Visited the Hypermarkets/Supermarkets last week and was sad to discover that they are still selling river CATFISH as the expensive John Dory fish.

Have spoken to a leading Consumer Association but they say that they are still researching! It is already more than six months.

The sore part is that they are falsely labeling the Vietnamese River CATFISH as something more expensive AND adding gelatin to make the fish fillet heavier thus cheating the consumers.

Surprisingly, even famous cooks on their recipe reviews in the Newspapers and Gourmet Magazines called this fillet "Dory Fillets"!!! Ha! Ha!

I use this recipe for my doughnuts. It's been favourite to my neighbourhood. Neighbourhood only lah... as I never had a chance to bring them out... tak cukup tangan daaaaaaaaa... I can only produce small quantity at a time

Customer's choice:

with strawberry filling


an ordinary ones

Kid's Choice

cocktail doughnuts


chocolate doughnuts as well...


Doughnuts

500g high protein flour
75g castor sugar
1 pkt instant yeast
8g salt
40g milk powder
3g baking powder
5g bread improver
1 egg
50g magerine
250 ml water

Put all ingredients except water in a mixer bowl. Mix them under medium speed till breadcrumbs mixture is formed. Slowly add water into it till a dough is formed. Knead till the dough becomes elastic and does not stick to the mixing bowl. Take out and rest for 10 minutes.
Punch the dough to let the air out. Divide the dough to small round shape - 50g each. Rest another 10 minutes. Roll out and shape. Proof it till becomes double in size.


Deep fry till golden - always turn it over to get an even cook and colour.

I got this recipe from internet but couldn't remember who the owner is. I modified here and there each time I try. Simple and easy. I like the crust formed at the top of each muffin , and soft in the inside

Muffin Recipe
Source: Internet

A: Lightly beaten
1/2 cup oil
2 eggs
1 cup fresh milk

B: Sift together
1 tsp salt
4 tsps baking powder
3 1/2 cups flour

1 cup sugar
2 cups chopped fresh/dried fruits

Preheat oven at 190 degree Celcius
In large bowl, combine flour mixture with sugar. Toss in chopped frouits and stir to coat with flour.
Pour in milk mixture and stir together.
Fill in muffin liner and bake at 190 degree Celcius till cooked.

Kali ni bukan pasal masak atau pasal jalan-jalan cari makan atau pasal makan angin...

Orange Sponge Cake



Orange Sponge Cake

250g Plain/Vanilla Sponge Mix
4 eggs
50 ml Orange Juice (guna yang kotak)
50 ml corn oil/cooking oil
1 tsp orange essence/orange oil

Pre-heat oven @ 170 degree Celcius.
Beat sponge mix, eggs and orange juice highest speed till light n fluffy.
Fold in essence and oil with wooden spatula till well mixed all together.
Bake for 50 minutes or stick inserted come out dry and clean.
Cool for 5 minutes and turn upside down on wire rack. Cool completely.
